Remove the outer leaves of the artichokes (more tough) then cut them into thin slices. Put them into an iron pan along with aboundant olive oil.Put some salt and let them cook. In the meantime, shake up the eggs on a bowl ,add salt and pepper. Pour them out on the artichokes and let the omelette getting thicker with a fork. Turn the omelette upon a course dish, to get it browned on the other side too. You should serve it hot but it is good cold too. We suggest you to have it hot between two slices of homely bread. In the same way you may prepare omelettes with onions, spinach. courgettes, wild asparagus, wild herbs, beets, mint, fresh garlic,marjoram, and "ficoccitti".
