Depress a heap of flour and pour out some hot water along with a pinch of salt in the center. Knead the dough till it will be quite smooth, then tear off a pinch from it and knead by stretching it with your hands to obtain macaroni. Repeat this operation with the whole dough. Display the strozzapreti upon a dish-cloth sprinkled with flour, then boil them into aboundant salted water. As they get on the water surface, strain them and season them with a sauce of tomatoes, garlic, olive oil and chili. If you like, sprinkle with grated pecorino cheese, though the dish does not calls for it .
