Clean the carp and season it inside with a clove of garlic, a little branch of rosemary, salt and pepper. Wet a baking-pan with olive oil and arrange there the carp, put some salt, pepper and put it in the oven. Peel the potatoes, cut them into pieces and boil them lightly. Strain and season them with olive oil, salt and pepper. Turn the carp on the pther side and put some salt and pepper there too. Pour out the potatoes all around the fish and bake it under a low heat. As they are done, peel the carp, take off the bone and display it on the course-dish along with the potatoes. Serve it hot.
