Peel the potatoes and cut them into cubes. Pour out as much water as you need for your soup into a saucepan, add the potatoes and some onions thinly cut. Put some salt and boil it for an hour under a low heat. Put some stale bread cut into slices or cubes, into the single dishes and pour out the soup. Season it with olive oil and serve it hot. If you like, sprinkle with grated pecorino cheese.
