Clean the giblets, wash and cut them into little pieces. Season them with olive oil, two leaves of sage, garlic, salt and pepper. Fry them lightly for a few minutes, then sprinkle with dry white wine and let it evaporate. When they are done, remove them from the heat and get them cold. Sprinkle with some lemon juice and mix well. Before serving them, toast some slices of bread and arrange the giblets over them.
