You may prepare the following tasting sauce with any lamb trimmings. Pour aboundant olive oil into a saucepan and add the trimmings along with some pieces of lamb. Add salt and pepper and a little branch of rosemary. Mix to get the lamb seasoned. After ten minutes pour out some fresh or bottle tomatoes (peeled and cut in pieces). Adjust with salt. Complete the lamb cooking. With it, season the pasta (any size you like), sprinkle with grated pecorino cheese and eat it hot. You may have the lamb as a second course with vegetables cooked on a pan, otherwise you may put the lamb in the middle of each dish, together with the pasta.
