Depress a heap of flour and pour out in the center some water and a pinch of salt. Make a dough, then a puff-paste not too thin. Wrap the paste upon itself and cut it into "manfricoli" thinner than fettuccine. Season them with the tomatoes, olive oil and chili sauce or with pork meat sauce or again with boletus or olives. Have them hot and, depending on the sauce you are going to use, sprinkle with grated pecorino cheese.
